I would be much less effort to just buy a knife.

Do you know who owns the tracks? If you mean that you have acquired land with a disused private siding on it, the rails probably belong to you along with the land. In any other situation, what you propose would probably be either theft of scrap metal or tampering with railroad property depending on the ownership and status of the track.

Question: Where can I catch the 1 train?

You cannot get off the F or E and catch the 1 at the same stop. They don't share any stops.

If you want to get from the F or E to the 1 without using any other trains, then take the E, get off at the Port Authority Bus Terminal stop, which connects to the Times Square stop one block away, walk through the pedestrian tunnel connects these two stops, and catch the 1 at the Times Square stop.

If you don't want to walk the pedestrian tunnel from Port Authority Bus Terminal to Times Square, then get off the E train at Queens Plaza, catch the R train at Queens Plaza, get off the R train at Times Square, and catch the 1 train at Times Square.

You can also get off the E or the F at Jackson Hts/Roosevelt Ave, catch the R train there, get off the R train at Times Square, and catch the 1 train at Times Square, but don't. The E train is faster than the R train.
