When fuel is burnt it turn into CO2 and Water.

This water vapour comes out the exhaust into VERY cold air, -50C or so at the height the planes fly. It instantly condenses and freezes, leaving a vapour trail.

Exactly the same as you can see your breath on a frosty morning, or the exhaust of a cold car engine.
